Ingredients:
Cake:
3 eggs
¾ cup flour
1 cup sugar
1 tsp Watkins Baking Powder
1 cup canned pumpkin
½ tsp Salt
1 tsp lemon juice
2 tsp Watkins Pumpkin Pie spice
Cooking Instructions:
Beat eggs for 5 minutes. Blend sugar, pumpkin, and lemon juice and fold
into egg
mixture. In a separate bowl, mix flour, baking powder, salt and Pumpkin Pie
Spice. Fold egg mixture into dry. Preheat oven at 375 degrees. Line
parchment paper in jelly roll pan or cookie sheet with sides. Spread mixture
evenly in pan and bake 20 minutes. Remove from oven and lift paper onto
towel and roll gently so cake will not break. Cool completely. Remove paper
slowly and fill with filling.

Filling:
1 cup powdered sugar,
1 - 8 oz. cream cheese
4T butter
½ tsp. Watkins Original Double-Strength Vanilla
1T canned pumpkin

Cream until well blended and spread onto cooled cake. Re-roll and
refrigerate until ready to slice. Keep in refrigerator until serving.
ENJOY!!!! TIP: A large can of pumpkin contains 3½ cups of pumpkin.
